Vegetable Soup with Beef

Vegetable Soup with Beef

Makes 6 servings


  • 2 cups canned organic or fresh tomatoes
  • 2 cups cabbage
  • 1-2 tbsp macadamia oil
  • 1 cup or 3 to 4 carrots, sliced
  • 2 cups green beans
  • 2 cups diced potatoes
  • 1/2 cup celery
  • 500g stewing beef or leftover beef and stock from a roast
  • 750ml of natural beef stock liquid or water


If meet has not been cooked, brown meant in 1-2 tablespoons of macadamia oil.
Combine all vegetables and stock with meat.
Season to taste with salt (optional).
Simmer covered for one hour. Remove lid to reduce if necessary.
You may add water or tomato juice if additional liquid is needed.
